Junior Sous Chef

We are currently looking for a Junior Sous Chef to join our team at The Lodge at Ashford Castle

Ingredients required to be the perfect Junior Sous Chef:

  • Successfully graduated with a professional culinary arts degree
  • Successfully completed Food Safety - Level 2
  • At least 1 years’ experience at Junior Sous Chef level or a minimum of 3 years at Senior Chef de Partie level within a 4 or 5 star hotel environment
  • Good knowledge and practical chef skills within a variety of sections of the kitchen, including fine dining is essential
  • Proven experience and ability to manage all cost controls e.g. food cost, labour etc
  • Proven experience of staff training, preparation of rotas, financial reporting, stock control and ordering
  • Fluency in both written and spoken English

The core emphasis of this role will primarily be in ‘hands on’ capacity where the person will be involved in day to day cooking, running sections, administration, etc. He/she will take instruction from the Head Chef and will assist in managing the Hotel’s Fine Dining Restaurant, ‘Wiles at the Lodge’.
